Looking for stained duck breast recipe? This recipe is definitely the best I’ve tried.

 

Ingredients for 4 persons

  • 4 duck breasts (with skin, 200 g each)
  • cloves of garlic
  • 1 tsp anise seeds
  • 1 tsp fennel seeds
  • 1 tsp Szechuan pepper
  • 2 tbsp brown sugar
  • 1 tsp coarse sea salt
  • 4 tablespoons maple syrup
  • 2 tbsp mild soy sauce
  • salad on wish




Directions

  1. Remove any residual feathers and tendons from the duck breasts. Rinse the duck breasts and pat dry. Use a sharp knife to deeply scratch the skin at intervals of approx. 1 cm, but do not cut into the meat.
  2. Peel the garlic and chop coarsely. Crush in a mortar together with aniseed, fennel, Szechuan pepper, sugar and salt.
  3. Rub the duck breasts on both sides with the stain. Place 2 duck breasts with the meat side on top of each other. Put the duck breasts in a freezer bag and let them rest in the fridge for about 1 day.
  4. Place the duck breasts face down on the grill. Grill on medium heat for about 10 minutes from both sides. Cover and let rest for 5 minutes.
  5. Meanwhile mix maple syrup and soy sauce. Dice the salad, rinse, clean and spin dry. Cut the duck breasts into slices and serve with salad and sauce.
